Chimichanga rolled out their new branding concept ‘MEXIco’ for the first time ever at intu Derby on July 1st to bring the authentic taste of Mexican cuisine to the UK.
The letting was secured in January 2016 in the heart of Intu Derby’s newly revamped dining quarter ‘Eat Central’, where Zizzi, Joe’s Kitchen, Byron Burger and Yo! Sushi opened last year.

The menu was developed by Johnny Hernandez, a chef renowned for his Mexican cuisine, who has worked in top restaurants in Las Vegas, New York and recently cooked for President Obama. He’s developed a menu to bring fresh authentic Mexican recipes to the UK, including his signature dish of puffed tacos and a cocktail menu that isn’t shy on tequila.
Johnny commented:
“What we’re doing different is that I’ve created a menu that has a broad appeal. You could bring a family here, a foodie, or hold a business meeting over lunch. I wanted to create a versatile environment and that is reflected in the food and vibe.”
Each detail of the restaurant has been hand-picked specifically for Derby, even down to the artwork which was sourced from the markets of Mexico.
