Edinburgh St James has secured Bonnie & Wild, a new concept food hall by Scottish restaurant brand, Mac & Wild. Bonnie & Wild will be the new anchor food hall at the centre of the Edinburgh St James development, and will consist of restaurant operators alongside fresh and packaged food and drink from a variety of artisan butchers, fishmongers, grocers, cheesemongers, chocolatiers and bakeries, and three unique bar concepts.
This new F&B anchor letting, centred on level four of the development, will demonstrate the very best of Scottish produce and hospitality, while also delivering a uniquely theatrical experience. Visitors will be able to taste flights of whisky, see salmon carved in front of their eyes or experience Highland stalking in ‘Smoky Barrels’, Mac & Wild’s virtual shooting range.
As a Scottish brand that is known and respected on the London food scene, Mac & Wild’s desire to bring their unique artisanal concept to Edinburgh St James is great news for the development and the city itself.
The food hall’s mix of traders aims to address the needs of the local population with an offering that has a global appeal. It is set to be delivered by Food & Beverage interior design specialist Studio Duncalf and will be located next to the luxury W Edinburgh hotel at the heart of the new development.
Ed Corrigan at Edinburgh St James said: “We partnered with Bonnie & Wild because of the pedigree of their team and their passion for quality Scottish produce. They know Edinburgh inside out; they have fantastic connections with Scottish farmers and producers, but have also travelled across the globe scoping out the top food markets in the world. The signing is hugely significant because it shows that even in a climate of lockdown uncertainty, Edinburgh St James, and the city, has lost none of its appeal. Scotland has some of the best produce in the world and this will be the best location in Scotland to showcase it.”
Andy Waugh at Bonnie & Wild, said: “Edinburgh St James is the perfect location to launch Bonnie & Wild. We love the fact that it is rooted in its community but has a global outlook. Our vision is to bring the best of Scottish produce to the local community as well as visitors from further afield, and we are so excited to create a platform for some of Scotland’s most interesting traders. We cannot wait to share more details about our plans and the traders we will be working with. And yes, we will be bringing our award-winning Venimoo burgers.”
